The Pacific Rim story starts with a Reisling wine, and for good reason. It has the potential to be the greatest type of wine in the world. In fact, more than 90% of what we make is a Reisling. What sets our Riesling varieties apart? 

A Beautiful Spectrum

At Pacific Rim, we understand the power of Reisling. This type of wine can taste like a variety of different fruits and spices. Even when the wine is cold, you’ll immediately notice the intense aroma wafting up from a glass of our Rieslings. Most good Rieslings start with citrus or fall fruits like apples and pears but add striking options like honeycomb and jasmine. At Pacific Rim, we work to incorporate a number of interesting starts into our Rieslings. Our 2019 Dry Riesling starts with a beautiful citrus note. Our 2018 Vin de Glacière Riesling begins with pears.

Rieslings are often characterized by high acidity levels, like those you might find in lemonade. The higher acid level adds to the crisp, tart taste our Rieslings often feature. 

Perfect Pairing

Rieslings also pair perfectly with a number of different foods. As you work to pair Pacific Rim’s Rieslings, think about foods that are rich with spices. From Thai to Indian foods, this is going to make a great match with dishes that feature aromatics like Cayenne, Allspice, and Tumeric. It also works well with vegetables that have a naturally sweet aspect like bell peppers and squash.
