Our grapes are picked early (20-21 Brix), and fermented at low temperatures in stainless steel tanks. Fermentation is stopped early at about 8% residual sugar to retain as much freshness and fruitiness as possible. Natural carbon dioxide in the wine creates a lively mouthfeel. No sugar added!

Tasting Notes: Wonderfully aromatic with sweet, bright acidity and pineapple and white peach flavors.
Pairings: Ideal with fiery fare, especially Thai, Szechwan, Mexican, Middle Eastern, and Caribbean cuisine.
Winter White Sangria
Ingredients
1 green apple, cored and chopped, 1 red apple, cored and chopped, 1 cup cranberries, fresh or frozen, 1 (750 mL) bottle of Pacific Rim
Sweet Riesling wine, 1 cup light rum, 1 cup club soda, 1 cup white cranberry juice, Rosemary sprigs for garnish (optional).
Recipe Instructions
1. Place all fruit in a large pitcher. Add wine, rum, club
soda, and cranberry juice and stir.
2. Chill in the fridge for 2 hours.
3. Serve in glasses with ice and some of the fruit.
