Production Technique

Pinot Noir grapes are harvested at about 23.5 Brix, de-stemmed before maceration, and gentle cap management techniques. Our fermentations take about a week to avoid harsh tannic flavors. After pressing and malolactic fermentation, the wine ages 6-12 months in barrels and tanks before blending and bottling.

Tasting Notes & Pairings

Tasting Notes:  Aromas of strawberries, rosehip, and cranberry. Soft and elegant with flavors of bright cherry and pomegranate.

Pairings:  Ideal with grilled salmon, duck, mushroom risotto, and pork loin.
